Many archaeological sites indicate that olive oil production was introduced by the Romans to areas in Extremadura about 2500 years ago. It is mostly a hot and dry region with little rainfall, so the soil quality relies heavily on air currents from the Atlantic Ocean. One of the main producers in this area is Pago Baldios San Carlos. The principal olives grown in Extremadura are Arbequina, Cornicabra, and Manzanilla.
