Still unsure?

"I had bought this olive oil believing I was getting a very high Polyphenol oil. But what I found was a much milder and lighter colored olive oil. For the statement of over 1000mg of polyphenols, I was expecting a somewhat darker and at least stronger tasting with some burn from this oil. Granted this oil is now at least one year from harvest so I would not expect to get the full polyphenol counting as surely the time factor alone would degrade it let alone any other factors that could have come into play. All in all the oil is tasteful, but I prefer a much more earthy, grassy taste."

Not bitter, just right

"Some high Poly oils are so strong tasting that they make the salad bitter. Not this high end Poly number oil! Great flavor and will order again. I am not use to spending this kind of money for an olive oil, and if not for the health benefits still would not be, but when it comes to good health, you can't put an amount on something that tastes this good and is a holistic, natural form of medicine. Elegant, Highest Quality

"I've had Marina Palusci's Alchimia, L'Uomo di Ferro, and 2025 Novello. They are all high (maybe highest?) end oils. The Alchimia and L'Uomo di Ferro have similar flavor profiles but differ in polyphenol intensity. Medium to light mouthfeel. They have this unique, lighter, uplifting, refined profile to them which tells you this is a serious oil. I was expecting the L'Uomo di Ferro to have more burn due to its higher reported polyphenol count but instead found Alchimia more peppery. Definitely give this brand a try."
