Traditional Balsamic Vinegar of Modena PDO Extra Vecchio represents one of Italy's most extraordinary culinary achievements, aged for more than 25 years according to centuries-old traditions.

Made exclusively from cooked grape must with no additives, it matures in a succession of wooden barrels crafted from different types of wood and undergoes annual transfers in naturally climate-affected vinegar lofts. This slow evolution creates remarkable concentration, depth, and complexity.

The result is a dense, enveloping balsamic with extraordinary aromatic richness and a refined sweet-and-sour balance that unfolds gradually across the palate.

Used exclusively raw and in very small quantities, it enhances aged Parmigiano Reggiano, fresh strawberries, vanilla ice cream, and delicate risottos such as Parmigiano or pumpkin. It also elevates fine meats and fish, bringing exceptional depth and elegance to every bite.
